Today I took my Mom's old Apple Cinnamon Muffin recipe and modified it. I added apple pieces to the batter and sprinkled brown sugar and cinnamon and sugar on the top.
Here's the modified recipe:
Preheat oven to 400 degrees.
Peel and dice 2 apples. Cook on stove top in brown sugar and cinnamon until soft. Set aside.
Combine:
2 cups flour
3/4 cup sugar
1 tsp baking powder
1 tsp salt
1 tsp cinnamon
1 tsp vanilla
1/2 cup vegetable oil
1 cup applesauce
2 eggs
Stir in cooked apples. Fill muffin trays 2/3 full. Sprinkle brown sugar on top. Sprinkle cinnamon and sugar mix on top. Bake for 15-20 minutes.
Makes 21 muffins.
Later in the evening I went to Kelseys for margaritas, weird cherry and jalapeno chip dip and some classic Disney apples to apples. We decided "My Room" is the Disney version's Hellen Keller card. (Babysitters won this round)
